Ingredients
1 sheet of store-bought puff pastry, thawed
1/2 cup fresh raspberries
2 tablespoons sugar
1/2 teaspoon cornstarch
1/2 teaspoon lemon juice
1 egg, beaten (for egg wash)
Powdered sugar, for dusting (optional)
Preparation
Prepare Raspberry Filling:
In a small bowl, gently mix together fresh raspberries, sugar, cornstarch, and lemon juice. Set aside.
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare Puff Pastry:
Unroll the thawed puff pastry sheet onto a lightly floured surface. Cut it into four squares.
Assemble Croissants:
Place a spoonful of raspberry filling onto each puff pastry square.
Carefully roll up each square into a croissant shape, starting from one corner and rolling towards the opposite corner.
Brush with Egg Wash:
Place the rolled croissants on a baking sheet lined with parchment paper.
Brush the tops of the croissants with beaten egg wash.
Bake:
Bake in the preheated oven for 15-20 minutes, or until the croissants are puffed and golden brown.
Cool and Serve:
Allow the croissants to cool slightly before serving.
