This recipe provides a quick and easy way to enjoy delicious Raspberry Croissants for four servings in just under 30 minutes.

The total time required, including both preparation and cooking time, is approximately 25-30 minutes.

Ingredients

  • 1 sheet of store-bought puff pastry, thawed

  • 1/2 cup fresh raspberries

  • 2 tablespoons sugar

  • 1/2 teaspoon cornstarch

  • 1/2 teaspoon lemon juice

  • 1 egg, beaten (for egg wash)

  • Powdered sugar, for dusting (optional)

Preparation

  1. Prepare Raspberry Filling:

    • In a small bowl, gently mix together fresh raspberries, sugar, cornstarch, and lemon juice. Set aside.


  2. Preheat Oven:

    • Preheat your oven to 375°F (190°C).


  3. Prepare Puff Pastry:

    • Unroll the thawed puff pastry sheet onto a lightly floured surface. Cut it into four squares.


  4. Assemble Croissants:

    • Place a spoonful of raspberry filling onto each puff pastry square.

    • Carefully roll up each square into a croissant shape, starting from one corner and rolling towards the opposite corner.


  5. Brush with Egg Wash:

    • Place the rolled croissants on a baking sheet lined with parchment paper.

    • Brush the tops of the croissants with beaten egg wash.


  6. Bake:

    • Bake in the preheated oven for 15-20 minutes, or until the croissants are puffed and golden brown.


  7. Cool and Serve:

    • Allow the croissants to cool slightly before serving.

    • Optionally, dust with powdered sugar before serving.
