Ingredients
1/2 cup almond flour
2 tablespoons coconut sugar (or sweetener of choice)
1/4 teaspoon baking soda
Pinch of salt
2 tablespoons coconut oil, melted (or another healthy oil like avocado oil)
1/2 teaspoon vanilla extract
2 tablespoons dark chocolate chips
Preparation
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a small mixing bowl, combine the almond flour, coconut sugar, baking soda, and salt.
Add the melted coconut oil and vanilla extract to the dry ingredients. Mix until well combined.
Fold in the dark chocolate chips.
Divide the dough into 4 equal portions and roll each into a ball.
Place the cookie dough balls onto the prepared baking sheet, leaving some space between each cookie.
